Food for thought...

What I'm watching: Guys Big Bite

So he is making a Cedar Plank Salmon (Just the name sounds expensive) and Guid-Moc-Shoe. The Guid-Moc-Shoe you have to use all this ingredients

3 fresh corn on the cob, preferably white, with husk
1 red bell pepper, diced
1 green bell pepper, diced
1/4 pound bacon, diced
1 red onion, diced
1 yellow onion, diced
1/2 jalapeno, diced
3 celery stalks, diced
3 tablespoons all-purpose flour
1/4 cup white wine
3/4 cup low-sodium chicken stock
1 tablespoon salt
1 tablespoon freshly ground black pepper
1/4 cup Roma tomatoes, diced

just to throw some vegetables together.. I get that the point is to make vegetables more desirable to eat but come on.. I only have my husband, my daughter and myself to feed, do I really need to use 2 WHOLE onions and white wine?

This is all on the Food Network.. Now I like cooking and making great recipes but some of these recipes are like for special occasions or to feed 4-6 people. I think they need to add more budget friendly recipes.

Deserts is another thing, I would love to make cheesecakes or, chocolate cakes from scratch but I can barely make cupcakes out of the box to taste good.

But I guess I better learn it the Healthy way... Great Ex. of how food can be a good thing if you know how to eat it right..

Teresa Williams
Age: 27
Occupation: Medical assistant
Starting Weight: 310 lbs.
Why She Wanted to Lose the Pounds:

"I was sick of being 25 years old, huffing and puffing," says Williams, who lives in Burbank, Calif. "[I couldn't] even go up a flight of stairs without stopping to breathe. I hated shopping – I was a size 24. I wanted to have kids, I wanted to have a family. I wanted to live."

Weight Today: 150 lbs.!

"It's being able to do simple things that mean the most to me," says Williams, who loved swing sets as a child.

By her late teens, however, "my hips and thighs were too wide to swing without the metal part jabbing into my thighs." Now that she's lost 160 lbs., Williams says, "I'm like a little kid [at the playground!]

Amanda White
Age: 37
Occupation: Insurance Agent
Starting Weight: 335 lbs.
Why She Wanted to Lose Weight:

"One day I was coming up the stairs to my apartment," says White, who moved from Sri Lanka to the U.S. eight years ago, "I sat down on the couch, out of breath and I said to myself, 'Why are you doing this to yourself, Amanda?' There were nights when I was sleeping and I'd get up and pray, 'God, please don't kill me while I'm sleeping. Let me wake up in the morning for my little girl.'"

Weight Today: 145 lbs.!

After losing the weight, her daughter Simona, 13, told her, "I don't want to hurt you, but when you were fat, I couldn't put my arms around you to hug you." Says White: "That touched my heart so much. I did this for my daughter – but I wanted it for me."
